It's basically a type of biofilm that appears on the surface of beer and helps protect against microorganisms that might spoil beer. Our brewers at our Shaw location (CC: @bobbybump) tossed in 150 pounds of locally sourced Norton grape pomace and 15 gallons of Norton juice into wort for a new Berliner Weisse. We pitched lacto and expect a co-ferment from any friendly wild yeasts that hitched a ride with the grape skins. Just tapped: Empress Prunas, this American wild ale was brewed with Pilsner, Oats, a touch of Munich malt as well as Milk Lactose. At the end of the boil we added 30 pounds of Italian Plums and then inoculated with our house Lactobacillus culture.
