The 5-barrel brewing system at the Shaw Brewpub is the perfect size to experiment with new beer recipes, thus our brewpub offerings change almost daily. Some are made in a more classic style while others are open-fermented with wild yeasts and housed in our barrel room. Regardless of how they're made, you can always see where they are made, just on the other side of the bar.

ORNETTE | Grisette | 3.7% abv | 13.5oz Tulip
Bright, Peppery , Refreshing. Our rustic farmhouse wheat ale is fermented with a mix of yeasts from some of our favorite traditional breweries. Very dry and sprite; bright with pepper and acidity. Named after visionary jazz player Ornette Coleman. Open fermented.
I REMEMBER JEEP | Berliner Weisse | 3.6% abv | 12oz Stem
Vinous, Tart, Fruity. Our Norton grape Berliner Weisse is brewed with pilsner malt and wheat then topped off with 15 gallons of Norton grape juice and an additional 150 pounds of Norton grape must from Chrysalis Vineyards in Middleburg, VA before being open fermented with lactobacillus and brettanomyces.

CORN RIGS AND BARLEY RIGS | Dry-Hopped Berliner Weisse | 3.7% abv | 13.5oz Tulip
A tart wheat ale brewed with corn, wheat and oats then fermented with our house lactobacillus culture. Dry-hopping with Citra and Mosaic produce bright citrus, stone fruit and tropical fruit bowl impressions.
SAL DE GOSE | Oaxacan Style Gose | 4.1% abv | 12oz Stem
Tangy, Citrus, Smoke. Inspired by a mezcal based margarita, this Oaxacan style gose was brewed with oak smoked wheat and pilsner malt. At the end of the boil we added a ridiculous amount of limes, oranges, sweet orange peel, and a classic Oaxaca ingredient, Sal de Gusano, for salinity and a little spice kick. “Stigibeu”, a Zapotec word for cheers!

LAGERED NABI | Farmhouse Lager with Citrus | 3.8% abv | 13.5oz Tulip
Citrus, Bread Crust, Light. We took our recipe for Nabi, which is open fermented with our rustic farmhouse yeasts and brewed with plenty wheat, black limes, Cascade, Citra, and Hallertau Blanc hops and fermented it with a lager strain of yeast in a closed conical fermenter. Try it next to the original version of Nabi to see the impact yeast has on the flavor and mouthfeel of beer when the same exact ingredients and amounts were used.
AUGUST OCTOBER | Farmhouse Ale with Grapes | 6.7% abv | 13.5oz Tulip
White Grape, Dry, Funky. Fermented in one of our 45 hl French oak foeders from August through October with our house mixed-culture of wild yeasts along with fresh Pinot Gris juice and pommace from our friends at Old Westminster Winery in Maryland. The beer was exclusively hopped with Nelson Sauvin to intensify the wine grape character of the beer. We were inspired by the centuries old rustic amber/orange wine making tradition of the Republic of Georgia.

LOST SIGNAL | Citra Pale Ale | 5.7% abv | 16oz Pint
Orange, Tangerine, Crisp. This light bodied and citrus forward pale ale was brewed simply with pilsner malt and a touch of Oats and Wheat then finished with only Citra hops in the whirlpool. After fermentation we dry hopped with more Citra for an added burst of fresh citrus aroma.

COMRADE! | Anti-Imperial Stout | 3.7% abv | 16oz Pint
Dark Chocolate, Roast, Creamy. The recipe for this small stout was designed to deliver all the luxurious body and impact of a massive Russian Imperial Stout at 1/4 the alcoholic strength. A true breakfast beer brewed the oats, lactose and a sense of humor.
