The 5-barrel brewing system at the Shaw Brewpub is the perfect size to experiment with new beer recipes, thus our brewpub offerings change almost daily. Some are made in a more classic style while others are open-fermented with wild yeasts and housed in our barrel room. Regardless of how they're made, you can always see where they are made, just on the other side of the bar.

CORN RIGS AND BARLEY RIGS | Dry Hopped Berliner Weisse | 3.8% abv | 12oz Stem
Tart, Fruity, Refreshing. This beer is open fermented with lactobacillus and brewed with a lot of corn and some oats and then dry hopped with Citra and Mosaic. Expect tartness, super bright citrus, stone fruit & tropical fruit bowl.

DIAMONDS, FUR COAT, CHAMPAGNE | Aromatized Berliner Weisse | 3.8% abv | 13.5oz Tulip
Zesty, Floral, Tart. This tart wheat ale is fermented with lactobacillus and finished with our house mixed-culture of wild yeasts. Bitterness, alcohol and residual sugar are very low allowing the late-boil addition of elderflowers and fresh grapefruit peel, and dry-hopping with Hallertau Blanc to shine through. The recipe was written to mimic some of the floral and citrus character of a brut Champagne.
WONKEE MOON | Dry-Hopped American WIld Ale | 4.6% abv | 12oz Stem
Peach, Tart, Bready. This tart and rustic golden ale was brewed using our house strain of lactobacillus in our open fermenter before being dry hopped with Galaxy and Mosaic hops. Citrusy and faint biscuit aromatics compliment the citric and ripe peach flavor and clean tartness on the palate..
VINTAGE PIQUETTE - AGED 6 MONTHS | Brett Saison | 6.3% abv | 4oz Stem
Citrusy, Blanc Grape, Quenching. Brewed with Pilsner malt and a substantial amount of wheat before being open fermented with our house mixed culture of Brettanomyces. A large single addition of Nelson Sauvin was added to the end of the boil and then after fermentation was complete, we added sauvignon blanc grape must from our friends at Stone Tower winery.
BIERE DE MARS | Hoppy Farmhouse Ale | 5.6% abv | 13.5oz Tulip
Grapefruit, Funk, Hay. Brewed to celebrate the glorious month of March with some of our favorite things: wheat, oats, lots of Galaxy hops and our house mixed-culture of wild yeasts.

THUNDERBOMB | Hazy IPA | 7.1% abv | 16oz Pint
Mango, Citrus, Fruit Loops. Brewed with a handful of oats and wheat then hit hard with whirlpool hop additions including Amarillo, Equinox, and Citra. To enhance the aromatics of fresh fruit, we fermented with Saccharomyces Bruxellensis Trois and then dry hopped with the same hops we used during the boil. Pronounced yeast and hop derived aromas of tropical fruit on the nose with a drier finish and layered bitterness that dances alongside a citrusy distinctiveness.
GNOSIS - BOURBON BARREL EDITION | Barrel Aged Tripel | 10.0% abv | 8oz Goblet
Honey, Lemon, Bourbon. This is our Gnosis recipe barrel aged in a variety of different bourbon barrels for 2 years! Soft notes of honey and vanilla compliment the lemon character from Brettanomyces we added into the barrels. Reminds us of a cold and carbonated version of a “hot toddy”.

Rich, Spice, Smooth. This rustic Bière de Garde is open fermented with brettanomyces and lactobacillus and brewed with rye. Our homage to transforming-rock-n-roll-animal Lou Reed balances malt, acidity and yeast magic.

LATE NIGHT WANDER | English Style Dark Mild | 3.5% abv | 16oz Pint
NUTTY, TOFFEE, EARTHY. This lower strength and full flavored refreshing dark mild was brewed with Munich, Caramunich, and Flaked Oats that give this beer a rich nutty character. A clean finish and very low bitterness allow for the subtleties in this style to really shine.

BARON CORVO | Rustic Bière de Garde | 7.0% abv | 13.5oz Tulip
Vinous, Dark Fruit, Spice. This amber-hued, strong provisional farmhouse ale is fermented in 45 hl French oak foudres with our house-mixed culture of wild yeasts.
